Ingredients
- 200 g mixed lettuce leaves
2 tablespoons finely sliced mint
2 tablespoons chopped coriander
Dressing:
3 tablespoons lime juice
6 teaspoons peanut oil
1 teaspoon brown sugar
Cooking method
-
1. Toss the lettuce with the mint and coriander.
2. Combine the dressing ingredients and just before serving, toss with the greens.
Notes: Store fresh herbs wrapped in slightly damp kitchen paper or cloth teatowel in a plastic bag in the refrigerator and they will keep for over a week.
